Traditionally a Cantonese-style roasted meat, otherwise known as siu mei, one would typically see these hanging through the windows of Chinatown. But spare ribs themselves have a deeper history, with their name even coming from the German word rippenspeer, literally meaning ‘spear ribs’,  an homage to the traditional hog roasts on spits and spears.
